Air Fryer Chicken Wings come out shatteringly crisp without a drop of frying oil, and I still can’t quite believe it every time. The secret is almost embarrassingly simple: pat them bone dry, toss with a little baking powder, and let the air fryer do the rest. They crisp up like they came out of a deep fryer.

Two things make or break wing crispiness. First, moisture is the enemy, so patting the wings completely dry before they go in matters more than any single step. Second, a spoonful of baking powder (make sure it’s aluminum-free so it doesn’t taste bitter) raises the skin’s pH and helps it brown and blister as the fat renders out. What you get is thin, crackly skin over juicy meat.

You can toss these in buffalo sauce, coat them in barbecue, or eat them dry with a little ranch.
