Dry the wings: Pat the wings as dry as you possibly can with paper towels. Any surface moisture keeps them from crisping.
Season: In a large bowl, toss the wings with the baking powder, salt, garlic powder, paprika, and pepper until evenly coated.
Preheat the basket: Preheat your basket air fryer to 400°F for about 3 minutes.
Air fry the wings: Arrange the wings in a single layer, skin-side up, with space between them; cook in batches if needed. Air fry at 400°F for 22 to 25 minutes, flipping every 8 minutes or so, until deep golden, crisp, and 165°F inside. Models vary, so use the color and internal temperature as your guide.
Sauce (optional): For buffalo wings, whisk the hot sauce and melted butter together and toss the hot wings in it right before serving. Leave them plain if you'd rather.
Serve: Serve right away with ranch or blue cheese and celery.
Notes
Pat the wings completely dry and toss with aluminum-free baking powder for crisp skin. Cook to an internal temperature of 165°F.
