Overhead view of Cheeseburger Sliders

Cheeseburger Sliders are what I make when I need to feed a crowd without standing at a grill flipping patties one at a time. A whole slab of Hawaiian rolls gets split in half, loaded with seasoned ground beef and melted cheese, and baked as one big pan instead of a dozen individual burgers.

The trick is building it like a casserole instead of like a burger: brown and season the beef, spread it over the bottom half of the rolls in one even layer, layer on the cheese, then set the top half back on before it goes in the oven. A butter glaze brushed over the top, with a little Worcestershire and garlic powder, is what gives the tops that golden, slightly savory finish.

Baking the sliders covered for the first stretch keeps the tops from browning too fast before the cheese has melted, then a few minutes uncovered finishes the job. It’s the same logic as a good burger, just scaled up and handed to the oven instead of the grill.

Why You’ll Love This Recipe

  • Feeds a crowd fast. One pan makes 12 sliders, no standing at a grill flipping patties in batches.
  • That sweet-and-salty combo. Hawaiian rolls against seasoned beef and a Worcestershire butter glaze is hard to stop eating.
  • Great for game days and potlucks. They travel well and reheat easily, so you can make them ahead.
  • Simple ingredients. Ground beef, rolls, cheese, and a few pantry staples for the glaze.

Cheeseburger Sliders Ingredients

King’s Hawaiian rolls specifically matter here, their sweetness against the salty beef and butter glaze is most of what makes these taste like cheeseburger sliders instead of just beef sandwiches.

  • 1 1/2 lbs ground beef (80/20)
  • 1/2 cup diced yellow onion
  • 1 tsp garlic powder, divided
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 (12-count) package King’s Hawaiian rolls
  • 12 slices cheddar or American cheese
  • 1/4 cup butter, melted
  • 1 tbsp Worcestershire sauce
  • 1 tsp sesame seeds

Recipe Variations

  • Swap in pepper jack cheese for a little kick, or use a slice of both cheddar and American for extra melt.
  • Add a layer of thinly sliced pickles under the cheese for real cheeseburger flavor.
  • Ground turkey works in place of beef, just season it a little more since it’s milder.

How to Make Cheeseburger Sliders

  1. Prep: Preheat the oven to 350°F and grease a 9×13 baking dish. Slice the whole slab of rolls in half horizontally, keeping the rolls connected, and place the bottom half in the dish.
  2. Brown the beef: Brown the ground beef, onion, half the garlic powder, salt, and pepper in a skillet over medium heat, about 7-8 minutes, breaking up the meat as it cooks. Drain off the excess grease.
  3. Assemble: Spread the beef mixture evenly over the bottom half of the rolls, then layer the cheese slices on top. Set the top half of the rolls in place.
  4. Glaze: Whisk the melted butter, Worcestershire sauce, and remaining garlic powder together and brush it over the tops of the rolls. Sprinkle with sesame seeds.
  5. Bake: Cover with foil and bake 15 minutes, then uncover and bake 5 more minutes until the cheese is melted and the tops are golden.
  6. Serve: Slice into 12 individual sliders along the roll lines.

Recipe FAQs

Can I Make These Ahead?

Yes, assemble everything up to the glaze step, cover, and refrigerate for up to a day. Add the glaze and bake right before serving.

What’s the Best Cheese for These?

Cheddar or American melt the most evenly, but a slice of both together gives you sharp flavor and good melt.

Do I Have to Use Hawaiian Rolls?

They’re what makes these taste like cheeseburger sliders, but any soft dinner roll slab works if that’s what you have.

How Do I Keep the Tops from Getting Too Dark?

Keep them covered with foil for the first 15 minutes, that’s what gives the cheese time to melt before the tops start browning.

Can I Double the Recipe?

Yes, use two baking dishes or a large sheet pan rather than crowding one pan, so the beef layer stays even and the sliders bake through the same.

How to make Cheeseburger Sliders – step 2

Cooking Tips

  • Use a serrated knife to split the whole slab of rolls at once instead of separating them first, it keeps the sliders connected and neater to serve.
  • Don’t skip draining the beef, extra grease will make the bottom rolls soggy instead of holding their shape.
  • Let the sliders rest 5 minutes after baking so the cheese firms up just enough to slice cleanly.

Storage and Freezing

To store: Store in an airtight container in the fridge for up to 3 days.

To freeze: Freeze the baked, cooled sliders in a freezer bag for up to 2 months. Thaw in the fridge overnight before reheating.

To reheat: Reheat covered in a 300°F oven for about 10 minutes until warmed through, or microwave individual sliders for 30-45 seconds.
