How to Make Taco Meat Less Greasy

Greasy taco meat soaks through the shell and pools on the plate. It comes down to the beef you buy and whether you drain it.

Drain it in a colander rather than tilting the pan and spooning fat out. You will get far more of it, and 30 seconds in a colander removes what tilting leaves behind.

  • Drain before the seasoning goes in, not after. Seasoning poured onto fat then drained is seasoning down the sink.
  • Do not rinse the meat. It works but it takes the flavor with it.
  • The third of a cup of water after seasoning is what turns the spices into a sauce that coats. Skip it and the seasoning sits on top as powder.
