Cajun dirty rice earns its name in the pan. The grains simmer right in with browned ground beef, pork sausage, and the holy trinity of onion, celery, and green bell pepper, so they come out speckled brown and soaked with meat flavor instead of sitting there plain and white next to dinner. One skillet does all of it. You brown, you stir, you put the lid on and walk away for 20 minutes.
The step that decides how this turns out happens before the broth goes in. Brown the meat hard enough to leave a dark crust on the bottom of the pan, then cook the trinity down in that fat until the onion softens and picks up colour of its own. - Brown the meat: Heat the oil in a large deep skillet over medium-high heat. Add the ground beef and pork sausage and cook 7 to 8 minutes, breaking the meat into small crumbles, until no pink remains and both reach 160°F. Leave the browned bits stuck to the pan. Storage and Freezing
To store: Keep leftovers in an airtight container in the fridge for up to 4 days. The rice firms up cold, which is normal.
