How to Keep Air Fryer Chicken Breast From Drying Out

Chicken breast dries out in an air fryer for one structural reason: a breast is thick at one end and thin at the other, so by the time the fat end reaches 165°F the thin end has been past it for several minutes.

  • Pound them to even thickness, about 3/4 inch. This single step matters more than temperature, time, or seasoning.
  • Or fold the thin tail under and secure it, which gets you most of the way there without a mallet.
  • Pull at exactly 165°F. Breast meat has almost no connective tissue and no fat to hide behind, so unlike thighs it gains nothing from extra time.
  • Rest 5 minutes before slicing. Cutting straight away pours the juice onto the board.
  • Slice against the grain. It will not add moisture but it makes what is there feel more tender.

Cook at 375°F rather than 400°F. The lower setting narrows the gap between when the outside is done and when the middle is.
