Why a Longer Simmer Makes It Better

Three things happen over a long simmer. Water evaporates, so the tomato flavor concentrates. The acidity of canned tomatoes mellows as it cooks, which is why long-cooked sauce needs less sugar. And the collagen in the ground beef breaks down into gelatin, which gives the sauce a body and cling that no amount of tomato paste replicates.

  • Lid off or ajar. A sealed pot cannot reduce and reduction is most of the point.
  • Lowest possible heat, barely a bubble. A hard simmer scorches the bottom and makes it bitter.
  • Stir every 15 or 20 minutes and scrape the bottom.
  • Add a splash of water or broth if it gets too thick before the time is up.

It is better again the next day for the same reason chili is: the flavors have time to diffuse and redistribute once the pot comes off the heat.

A parmesan rind dropped in while it simmers is free savory depth if you have one.
