Layered taco casserole with seasoned ground beef, tortilla chips, beans, and melted cheese baked into one easy dinner. A crowd-pleasing Tex-Mex bake the whole family eats.
Preheat and prep: Preheat the oven to 375°F and lightly grease a 9x13-inch baking dish.
Brown the beef: In a large skillet over medium heat, brown the ground beef until no pink remains, about 6-7 minutes. Drain the excess grease.
Season the beef: Stir the taco seasoning and water into the beef. Simmer for 3-4 minutes, until slightly thickened.
Layer the casserole: Spread half the crushed tortilla chips in the baking dish. Top with the seasoned beef, black beans, salsa, and half the enchilada sauce. Repeat with the remaining chips and enchilada sauce.
Add cheese and bake: Sprinkle the shredded cheese evenly over the top. Bake, uncovered, for 20-22 minutes, until the cheese is melted and the edges are bubbly.
Serve: Let it rest for 5 minutes, then top with green onion and serve warm.
Notes
Crush the tortilla chips rather than using whole tortillas so the layers hold a little texture instead of turning soft.
