Instructions
Load the crockpot:
Add the chicken thighs to the crockpot. Sprinkle with the garlic, thyme, rosemary, salt, and pepper.
Add the liquid:
Pour the lemon juice and broth over the chicken, and scatter the lemon zest and cubed butter on top.
Cook:
Cover and cook on low for 5-6 hours or high for 3 hours, until the chicken reaches 165°F and is fork-tender.
Finish:
Spoon the pan juices over the chicken before serving, and top with fresh parsley.
Notes
No cornstarch thickening here on purpose, this stays a lighter citrus-butter jus rather than a thick sauce.
