Instructions
Load the crockpot:
Add the chicken, butter, garlic, broth, Italian seasoning, salt, and pepper to the crockpot.
Cook:
Cover and cook on low for 5-6 hours or high for 3 hours, until the chicken reaches 165°F and is fork-tender.
Build the sauce:
Stir in the parmesan and heavy cream, if using, until melted and smooth, about 5 minutes on low.
Finish:
Spoon the sauce over the chicken and top with extra parmesan and fresh parsley before serving.
Notes
Simpler than an Alfredo-style sauce on purpose, no cream cheese layering, just butter/broth/parmesan, so it works over rice or potatoes too.
