Prep the stuffing: In a bowl, toss the stuffing mix with 1 cup of the chicken broth until just moistened. Spread it in an even layer in the bottom of the crockpot.
Season and add the chicken: Season the chicken breasts with poultry seasoning, salt, and pepper, and place them on top of the stuffing.
Add the soup: Whisk the remaining 1/2 cup broth into the cream of chicken soup and pour it evenly over the chicken. Drizzle the melted butter over the top.
Cook: Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until the chicken reaches 165°F.
